left-overs

Since we didn't have Thanksgiving at home I didn't end up with any good leftovers. I took mashed potatoes and a vegie tray. What I ended up with at home was a large bowl of potatoes that wouldn't fit in my large crock pot for travel. I had peeled about 20 lbs, mashed up most of them and put what wouldn't fit back in the fridge. For dinner I could have made a couple chicken fried steaks and gravy or potato pancakes or something equally time consuming :) Instead I made soup.

I fried one pound of bacon cut into 1/2 inch pieces with 1/2 a minced onion in a large pot and then drained the grease off.


I added all of the potatoes straight from the fridge, the ones that I had mashed and the ones I didn't.


I added half milk and half water to cover about 2/3rds of the potatoes. I also added a lot of pepper and some salt but everyone should season to taste.

I let it simmer on low for about 2 hours while I made some rolls using my bread machine recipe and voila' Dinner using leftover potatoes that would have otherwise gone to the chickens.
