no more leftovers leftover

So, turkey dinner on Christmas day, leftovers on the 26th, something new for the final day. I hate wasting food but sometimes leftovers are just a terrible idea. Sometimes. For our turkey finale we went with something new, an experiment if you will. Again, keep in mind that I make enough for 20 people :)

My husband absolutely despises tuna casserole. It happens to be my fav. Go figure. Anyway, keeping that in mind I put 2 large packages of broad noodles on to boil. In another pan I used 3 cans of cream of broccoli, 3 cans of cream of chicken, 2 cans of milk and chopped up all my leftover turkey and heated it up. I added 2 teaspoons of salt and 2 teaspoons of pepper. Drain the noodles, add the sauce and put into a buttered casserole.

You want to butter the dish for easier clean up.

Everything is already hot so you can bake it as long as you want, probably between 325 and 375 depending on how much time you need, while you ready anything else you want for dinner.


I had started my dough in the bread machine 90 minutes earlier. I added a teaspoon of garlic salt in place of 1/2 the salt in the recipe. Roll out the dough, cut into strips, let rise 30 minutes and bake for 20 minutes. When you take them out brush lightly with butter and sprinkle on more garlic salt. Just for personal taste I use a garlic salt w/parsley added.

It was a very satisfying dinner without feeling like leftovers. Best of all, I used up all the turkey and had an excuse to make bread sticks again :) Oh yeah, it came grudgingly, But he liked it!
