superbowl

I love superbowl...I just don't like watching the game. I spent the day in the kitchen instead and want to share.


This is an easy and amazing pizza roll recipe from Brown Eyed Baker. I did my standard bread recipe in the bread machine and rolled it out into a thin rectangle, brushed some butter on it, sprinkled a little italian seasoning, covered the entire rectangle in peperoni and shredded some mozzarella cheese on it. I rolled the long side like you would cinnamon rolls and pinched the seam tight and then sprinkled some garlic salt on the top and last let rise for about 45 minutes. While the oven was preheating to 350 degrees I sprinkled some olive oil on a cookie sheet and sprinkled corn meal so the pizza roll wouldn't stick. Cooked for about 30 minutes and let set for about 10 minutes. I sliced it into about 2 inch pieces and served with hot pizza sauce or ranch sauce for dipping. HUGE HIT!! It was so much easier than trying to make pizzas. I will definitely make this a lot more often. I'll just make my fav pepperoni and then make a supreme with all the ick that hubby and son like :) I only used 1/3 of a package of the peperoni and 1/4 pound of cheese so it was very economical as well.


Since the pizza roll was a new recipe I only made 1 roll. I used the other half of the dough for Cinnamon rolls. Roll out just like the pizza roll, brush with butter, sprinkle 1 cup brown sugar with 1/4 Cinnamon added, roll up long side, pinch seam, slice 1 & 1/2 inches, let rise 45 minutes, bake at 350 for 30 minutes. Cool slightly and frost with 1/2 cup cream cheese and 2 cups of powdered sugar and 1/2 ts of vanilla. Honestly, I didn't care much for them but they were devoured in less than 10 minutes.

There was the standard italian meatballs and smokies in bbq sauce in the crock pot. I also made a pasta salad, deli sandwiches, baked beans, vegies, chips and dip. I made an orange jello salad with mandarin orange slices and whip cream. hmm, what else.


Oh yea, can't forget the ribs :)
It was just a day of the kids being good and watching movies down stairs, the guys yelling (sometimes obscenities) at the tv and me in my own little world in the kitchen. It was a very good day :D
