This was me trying to be creative one night for dinner.
If you can't tell, they're twice baked potatoes :) They were a total pain in the butt to make but next time I'll do things a little different and they were a huge hit. I took this from another blog but I forgot to bookmark it. As soon as I find it I'll put a link for their creativity credit.
I put one potato per person in the microwave for 20 minutes. I forgot to poke them first and lost a couple. Oops 1
The potatoes weren't completely done and was a bit of a pain to remove. Oops 2. I lost more then one skin half because they tore. Oops 3 was using too much butter. Less is definitely more because they baked a little greasy instead of creamy. I took all the potatoes, milk, butter, and salt and whipped them up. I put them back into my (remaining) shells, topped with cheese and broccoli and baked for a half hour on 350. They didn't have much color so I ran the broiler for a couple minutes.
I only put the broccoli on half of them for those potato purists (me) and the cheese was a wonderful addition. Next time I'll make them ahead of time instead of trying to assemble them while frying chicken (another first). And I'll want to make several flavors. I meant to sprinkle bacon on the top of some. Some chives might be nice for those who like onions. The really nice thing about these is that the possibilities are as endless as your imagination. This was a good start.
