I'm not feeling well, I'm still recovering from the flu but I wanted to make something for dinner that would be warm and filling while the storm was raging outside. This is what I had in the cupboards.
Dehydrated potaotes. You don't have to presoak (and I usually don't) but I was running late on dinner. If you do presoak you use equal amounts of potatoes and hot (tap) water.
I had leftover ham so I cubed what was left, grated about 1 1/2 cups of cheese and diced 1 small onion.
I used 2 cans of condensed celery soup, 2 cups of milk (from powdered), 1 ts of salt and 1 ts of pepper. Simmer.
While the sauce is heating up layer your potatoes, onions, ham and cheese. Since I am feeding a small army I made mine in a 9x13 pan with 3 layers.
Pour sauce over your potato mixture. If you're using dehydrated potatoes you will also need to fill the pan with water to just even with the potatoes. It looks better if you pour it carefully into a corner so none of the sauce washes off the potatoes.
Bake at 350 for 45 minutes
And serve! 1 dish to dirty and it will make a good lunch for tomorrow. I fed 8 and had leftovers.
