enchiladas

I'm feeling better and decide the only thing that's going to fix me up is enchiladas.

I go through my cupboards and this is what I find. I am truly the "Queen of Instant." I decided to pull out some hamburger and make some beef enchiladas, cheese and bean nachos and because I'm trying to learn how to cook, I grab a jar of chicken breasts that I canned for some cheese and chicken quesadillas.


Ground beef, refried beans, cheddar cheese layered onto a tortilla shell and rolled in enchilada sauce, placed into a pan and bake at 350 for 1/2 hour. Simple and instant. Until my son walks in.


Look mom, just shred the chicken, add some sauce, add some seasoning you didn't even know you had up in the cupboard...

Layer some beans and chicken and rice on a tortilla. Add some cheese and sour cream and that's all there is to it!


Chicken enchiladas! How the hell does he do that!

Mine were good too, just a little plain :)

MY grandchild (his daughter) wouldn't take sides :D I'm not buying the instant stuff (unless it's a REALLY great price, of course!) but I do have quite a bit to go through. When something is a great price I buy a case of it so I do have some learning time ;) and am lucky enough to have the net so I can do research for places like this. I only have about 4 cans of enchilada sauce left so I want to try hers.
