dreaming of pies

I have been laid up with the flu just dreaming for enough energy to make some pies. I wanted a chocolate cream, a coconut cream, and a banana cream. I was hungry (starving) but I had no energy...just a sore throat. I had decided today that I am not dying so off to the net I went. I made 2 pies  because I don't carry coconut milk as a staple but I'm only counting 1 as "made". The second one was a pre-made pie crust with cooked Vanilla pudding mix and bananas in it. It tastes great but even I can do a little better than that.

Chocolate  pie
Mix 1 2/3 cups of water, 3 Tb cornstarch and 6 Tb unsweetened cocoa together
Add 3 beaten egg yolks and 14 ou of sweetened condensed milk
Microwave on high 2 minutes, mix, microwave high 1 minute, mix continuing every minute until very thick. (about 4-5 minutes total)
Add 2 Tb butter and 1 ts vanilla into mixture and stir well
Pour into a pre-baked pie crust and refrigerate for 3 hours. Dollop with whip cream before serving.



I used a pre-made piecrust because mine turn out terrible, but I am ever on the lookout for a foolproof recipe :)
The vote was unanimous...loved it! It was a very rich chocolate taste.
